Beautiful Roasted Tomatoes
I love making roasted tomatoes at home. It is such and easy recipe to make and gives the tomatoes a beautiful, developed tomato flavor. They are great by themselves, in a salad, in a sandwich and even made into a soup.
Ingredients:
12 roma tomatoes
2 tbsp kosher salt
1 tbsp ground black pepper
1 pinch granulated sugar
1 tbsp olive oil
2 tbsp dried herbs (rosemary, sage, thyme)
Tools needed:
Cutting board
Sharp Knife
Mixing bowl
Baking sheet
Parchment paper
Oven
Strainer
How to make them:
Clean tomatoes under cold running water, dry. Cut ends off tomatoes. Cut into quarters and place in mixing bowl. Toss with oil, salt, sugar, pepper and dried herbs. Lay tomatoes flat on parchment lined baking sheet. I placed an entire garlic head in the middle for even more flavor. Just cut the top off the cloves. Drizzle with oil and season with salt and pepper. Bake 350 for 1 to 1-1/2 hours. You can tell that they’re done when the skins shrivel up and they lose some moisture. Save the head of roasted garlic too! These go great in salads, on a bruschetta, on a sandwich and even in a tomato soup!
