Crispy Carrot Ribbons

Crispy carrot ribbons make a beautiful garnish as well as add nice texture and flavor to your dish. Super easy to make I recommend using organic carrots for best result. I made these with rainbow carrots, all orange carrots will be tasty too!

Ingredients:

3 to 4 carrots. I used rainbow carrots

1 tbsp each salt and pepper

Olive oil

Ice cubes for cold shocking carrots.

Tools needed:

Vegetable peeler

Cutting board

Sharp knife

Strainer

Small stock pot

Metal Mixing bowl

Baking sheet

Parchment paper

With your vegetable peeler, peel carrots lengthwise. Peel the carrot down as far as you can, be careful not to get your fingers.

Get an ice bath ready to go. Place3 cups cold water and 2 handfuls of ice in a metal mixing bowl.

In a small stock pot, bring 1 qt water to a boil, season water liberally with kosher salt. Carefully place peeled carrot ribbons in the boiling water. Blanch carrots for about 1 minute. Strain out carrots from water and place carrots in an ice bath.

Remove carrots from ice bath and lay flat on a parchment lined baking sheet. Drizzle with oil and season with salt and pepper.

Place carrots in a preheated 375 f oven and bake about 25-30 minutes. Take out half way and toss around the carrots. They will be nice and crispy when done. Oven times Mary vary.

Enjoy as a garnish on some soup or on a stew!
