Sweet and Spicy Hot Sauce Marinated Chicken
Ingredients:
3 chicken breasts, fat trimmed
2 c fermented mango habanero hot sauce, plus 1/2 c for basting (recipe here)
1 orange, zested and juiced
Fresh oregano, roughly chopped1/4 c
2 garlic cloves, peeled
1-1/2 tbsp seasoned salt
1/4 c honey
Freshly cracked black pepper
Tools needed:
Sharp knife
Cutting board
Baking sheet
Parchment paper
Microplane
Small mixing bowl
Ramekin
Basting brush
Glass baking dish
Plastic wrap
How to make it:
***For the wet rub
In a small mixing bowl, zest orange and garlic cloves. Juice the orange. Add chopped oregano, seasoned salt pepper and the honey. Mix thoroughly and set aside.
Trim fat off the chicken and any other unwanted parts. Place chicken in glass baking dish. Rub chicken entirely with wet rub, let sit with rub on it for 30 minutes. Pour hot sauce over the chicken, covering it entirely. Cover with plastic wrap and marinate for 6-8 hours, flipping chicken half way through.
Preheat oven to 400 f
Pull chicken from marinade, place on parchment lined baking sheet. Bake 400 for 30-35 minutes. I pull the chicken when it reaches 150-156 degrees, baste it with some hot sauce and broil on high it for 5-6 minutes on center rack. Keep and eye on it as it may need less time depending on how hot your broil setting works. Broiling the chicken will cook it the rest of the way through and will give the chicken a good, caramelized hot sauce crust. I baste the chicken once it comes out of the oven, serve immediately.
