Beer Beef Stew For Max Comfort When It’s Cold Outside

Nothing like a big bowl of hot stew for dinner on a cold day!

Warm and cozy beer beef stew that will comfort you on those colder days! It will make your house smell delicious as it’s cooking, warming you from the inside out! Really great stew with a handful of ingredients that won’t break your wallet. Watch me make this on Youtube. Goes perfectly with a side of crusty bread and a beer if you feel to do so! From my family to yours, this will keep you warm and full on a cold crisp day. Let’s get to it….

Ingredients:

2 lb sirloin tip roast

3 carrots, cleaned

7 pearl onions

3 cloves garlic, peeled

3 season beers, I like Samuel Adams

2 c beef stock

7 mini gold potatoes or fingerling potatoes

Tools needed:

Dutch oven

Sharp knife

Cutting board

Oven

Bottle opener

How to make it:

Preheat oven 325 f

Wash and cut carrots into 1/2 inch thick pieces. Peeling the carrots is optional, I don’t peel them. Peel garlic and pearl onions keeping whole.

Trim any excess fat off sirloin and cut into roughly 1 inch cubes. Preheat dutch oven over medium high heat (7 on the dial) until smoking. In batches, sear the beef with 1 tbsp oil and pinch salt and black pepper until nice and brown on all sides. Set aside on a plate and sear the rest of the meat.

Remove meat from dutch oven. Reduce heat to medium (5 on the dial). Add carrots, onions and garlic. Season with pinch of salt and black pepper. Saute for 1 minute to get a slight caramelization on the outside of the carrots, onions and garlic.

Deglaze dutch oven with half of one beer to start. Scrape bottom of dutch oven to remove all the good browned caramelized bits. Add the rest to the beers and enough beef stock to cover all the ingredients. Add potatoes and crank up the heat to high. Bring up to a boil, then kill the heat and add some thyme sprigs. Cover with a lid and place in preheated oven. Cook for 3-4 hours. When done, the meat will easily shred apart.

Plate in your favorite bowl with a side of French bread and softened unsalted butter.
