Fermented Corn Makes The Best Salad: Summer Recipe
This is a beautiful, brightly flavored salad. Great colors, textures and flavor profile. Clean flavors with a nice, full bodied vinaigrette. Fermented Corn is simple to make and adds a nice depth of flavor to the salad. Plus, the health benefits are pretty great too. The salad is perfect for summer time and uses great seasonal ingredients. Watch how I make it on my Youtube channel!
Ingredients:
1/2 c Fermented Corn (see post)
1/4 c pistacchio
10 cherry tomatoes, halved
1 carrot, cut into matchsticks
1 shallot
6 leaves fresh basil
2 c spring mix salad
1/2 c avocado oil
1 avocado
3 limes juiced and zested
1 tbsp brine from fermented corn
Tools needed:
Cutting board
Sharp knife
Glass mixing bowl
Measuring cups and spoons
Microplane
Wire Whisk
How to make it:
Slice shallot as thinly as possible and put it in a glass mixing bowl, seasoning with a pinch of kosher salt. This will pull the natural sweetness out of the shallots. Halve the tomatoes, cut carrots into matchsticks and add to the bowl. Add 1 tbsp brine from the fermented corn, lime juice and zest. Allow to marinate for 10 minutes, this will give the vinaigrette a good flavor and nice body to it. This is a loose vinaigrette with full, bight flavors.
Slowly drizzle in oil while whisking gently. Put in your greens and basil, gently toss with clean hands.
Put on a plate, top with a few drops lime juice, the fermented corn and pistachios. I like to finish it off with some freshly cracked black pepper.
