Easy Homemade Cornbread Baked In A Cast Iron Skillet - You Will LOVE This Recipe
Ingredients:
1 c flour
1 c cornmeal
1/2 c granulated sugar
1 t salt
2 tsp baking powder
2 egg
1-1/3 c milk or heavy cream
***or you can use buttermilk
1/2 c softened unsalted butter
1 tbsp butter for coating the cast iron pan
Tools needed:
Mixing bowl
Cast iron skillet
Measuring cups and spoons
Wire whisk
How to make it:
Preheat oven to 400 degrees F.
In a mixing bowl combine the butter, eggs and sugar. Whisk together vigorously until the ingredients start to become pale, light and airy. Add the rest of the ingredients and whisk until the just incorporated.
Rub the bottom and sides of the pan with 1 tbsp butter, pour in the batter. Place in the preheated oven and bake for 20-25 minutes. Cooking times may vary. Poke center of the cornbread with a toothpick and if it comes out clean, it is ready.
Let the cornbread cool for 10-20 minutes. Tip the pan upside down to remove the cornbread from the pan. It should plop right out. Place on a cooling rack and cool to room temperature for about 1 hour before cutting into the cornbread.
I made some cowboy candy that is perfect for this if you like something sweet and spicy. Alternatively, drizzle the top with honey or serve as is. Also goes great with chili!
