3 Ingredient Peanut Butter Cookies
Ingredients:
1 c creamy peanut butter
1 c granulated sugar
1 whole egg
***optional is a garnish with chocolate on top. Hershey’s kisses are my go to’s
Tools needed:
Wire whisk
Mixing bowl
Sheet pan
Parchment paper
Scale if you want to weigh them out
Measuring cups
Food processor if making your own peanut butter
Let’s make these easy peanut butter cookies!
I love to make peanut butter at home. I use it in baking and for peanut butter sandwiches. In a food processor, place 10 oz dry roasted, salted peanuts and puree for around 5 minutes. It will be really creamy when ready to go. You can absolutely use store bought peanut butter too!
Crack open your egg in a mixing bowl, add your sugar. Mix with a wire whisk until nice and pale. Will be slightly foamy as well. Combine this mixture with the peanut butter and mix thoroughly until fully incorporated.
I like to weigh the peanut butter out and divide it into equal balls for the cookies. You can eyeball this part if you don’t have a scale. Try to get them as close as possible so that they bake evenly. Place on a parchment line baking sheet and bake 325 F for 15 minutes.
