Cherry Coke BBQ Sauce, My Secret Method To Making This Delicious Sauce
Ingredients:
2 liter cherry coke reduced to 2 c
30 lacto fermented cherries
Pinch anise 1/2 tsp
Pinch cumin seeds 1/2 tsp
Black pepper
1 tbsp chili powder
1 tsp cayenne
2 tsp coriander
2 sprigs fresh basil
3 oz tomato paste
2 tbsp honey
2 tbsp white distilled vinegar
1 tsp fine sea salt
1 tsp garlic powder
1 tsp onion powder
Tools needed:
Stock pot
Measuring cups and spoons
Rubber spatula
Large spoon
Jar for storage
How to make it:
This sauce is super easy to make.
Pour the entire amount of cherry coke into an appropriately sized stock pot. Turn heat on to high and bring to a boil. Reduce heat to medium low to keep at a simmer. Continue to simmer for about 1 hour or until the liquid is reduced to 2 c. Once reduced, add all the ingredients to the stock pot and whisk to incorporate. At this point you can keep simmering to reduce and thicken the sauce up. Since there’s a good amount of sugar in the cheery coke, the sauce will thicken as it cools. If it’s a consistency that you like, use as any other bbq sauce. If you want it thicker, reduce more…thinner and add a splash of coke to it.
