Watermelon Feta Salad W/Mint

Watermelon and feta salad is the perfect flavor bomb in salad form. It is perfect in the summer when watermelon is at peak flavor. I used fermented watermelon that I made, see post.

Ingredients:

1 c watermelon, cut into cubes

1/2 c feta

1/4 c chopped walnut

5 sliced green olives

2 stems worth fresh mint

Juice and zest of 1 lime

1/4 c apple cider vinegar

1/2 c avocado oil

1 shallot

2 handfuls arugula

1 serrano

Pinch kosher salt

How to make it:

Thinly slice shallots, place in a glass mixing bowl. Lightly salt to help pull some sweetness out of the shallots. Add vinegar and the juice of 1 lime. (I also used 2 tbsp brine from my lacto fermented watermelon). Let sit to marinate for a couple minutes.

Add lime zest and drizzle in the oil while whisking. This is a loose vinaigrette. Add mint, feta, arugula, watermelon and olives. Toss gently and plate. Top with chopped walnuts and a few more drops of lime juice. SUMMER PERFECT SALAD!!!
