How to make it:
I prefer to sear my steak that is at room temperature since I feel it sears the best and I am able to get a nice caramelized crust on it.
Heat pan over medium high heat until smoking. Season the steak with salt and pepper, pat dry. Add oil to the pan and carefully drop in the steak away from you. Depending on thickness, the sirloin may only need 2-3 minutes per side for a medium rare. I also like to sear the sides on a thicker sirloin. Once cooked to your liking, remove from pan and let rest for 10 minutes before slicing. While the steak is resting, slice the tomatoes, avocado and toast the bread.
On the toasted sourdough bread, slather the mayonnaise on both pieces of the toasted bread. Slice the rested steak. Layer the steak, cheese, tomatoes, arugula, and avocado on the bottom piece of bread. Place the top on and enjoy!
Goes great with fries, salad or a good potato soup! Click the link for my delicious baked potato soup.
