How To Make A Jalapeno Smash Burger!
Deliciously spicy jalapeno smash burger. This is the PERFECT spicy burger.
Ingredients:
1 lb ground beef portioned into 90g or 3 oz (use 1/3 measuring cup to put the beef in)
1 package Brioche or potato buns
American cheese
Sliced pepper jack cheese
2 jalapenos
2 cloves garlic
For marinated shallots
1 shallot
1/2 c apple cider vinegar
1/2 tbsp raw cane sugar
(Marinate for 1 hour up to 6 hours
For the spread
2 tbsp mayonnaise
1 tbsp hot sauce
1/2 tsp black pepper
Pinch kosher salt
Tools needed:
1/3 measuring cup
Microplane zester
Cheese grater
Large mixing bowl
Weight for smashing burger (I use my offset spatula and potato masher)
Parchment paper
Cast iron skillet or stainless steel pan
Sharp knife
Cutting board
How to make it:
Marinated shallots are tasty. The marinade brings out the sweetness in the shallot.
Make the marinated shallots by slicing the shallots thin. Add the vinegar and sugar to a jar, add shallots and marinate for 1 hour. The shallots can be kept in the marinade for up to 24 hours.
Cut the ends off the peppers. Carefully grate the jalapeños on the cheese grater to shred. You can also slice thin with a sharp knife.
Place ground meat into a mixing bowl. Grate the garlic cloves into the bowl with the meat and mix to combine. Portion the meat out using a 1/3 c measuring cup. Place meat onto a plate once portioned.
For the spread, add all ingredients to a small bowl and mix to combine. Taste and adjust seasoning if desired.
Warm up your pan over medium heat for 2 to 3 minutes.
Grab 1 or 2 pieces of meat and season them with salt on the top and bottom. Oil the pan with 2 t tbsp oil and carefully place meat in. Immediately press the meat down flat with the weight or offset spatula. I put a piece of parchment paper between the meat and spatula to help the meat not stick and it also helps with hot grease from getting onto your hands. Once the meat is flat, top with the jalapenos with a small pinch of salt. These cook really quickly and are ready to flip within 1-1/2 minutes. Once flipped, top with a slice each of the American cheese and pepper jack.
Once cheese is melted, burger patties are ready to be removed from the pan. Toast the buns slightly in the same pan and place a good amount of the spread on the top and bottom portions of the buns. Add a good pinch of the marinated shallot on the bottom portion of the bun and top with 1 patty or 2 depending on how hungry you are. Finish with placing on the burger bun top and enjoy!
