Homemade Buckwheat Banana Bread You Can Easily Make At Home…Healthy And Delicious
This buckwheat banana bread recipe can be made vegan or non vegan, both are insanely delicious. I love the flavor of buckwheat and it holds its structure pretty well given there’s no gluten in this bread. Buckwheat is healthy for you, but taste AMAZING!
Ingredients:
1-1/2 c buckwheat flour (190 G)
3-4 ripe bananas
1/2 tsp baking soda (3 g) or 1 tsp baking powder (4 g)
1 tsp cinnamon (3 g)
1/2 tsp nutmeg (1g)
1/4 tsp salt (1.5 g)
Pinch ground clove
1/4 c chocolate chips (optional)
2 eggs or 2 flax eggs for vegan (1 T ground flax seeds and 3 T water per egg) (8 g ground flax, 90 ml water)
1/3 c coconut oil, melted (79 mL)
1/3 c almond milk, oat milk or whole milk (79 mL)
1/4 c honey (80 g), maple syrup works great too
1 tsp vanilla extract (5 mL)
How to make it:
Preheat oven to 350 degrees
Mash the bananas using a masher or wire whisk. Mix dry and wet ingredients in separate bowls, combine gently folding dry to wet ingredients. Rub coconut oil in a loaf tin and pour batter into the tin. Bake for 30-40 minutes. Cool and serve with almond butter or peanut butter. Also delicious all by itself!
