Fig Appetizer: A Delicious Use for A Seasonal Favorite!

Finished fig appetizer on platter with arugula and strawberry.

Ingredients:

1 pint fresh figs

1 pint fresh strawberry

1 c sherry vinegar

1/4 c peppercorn medley

1/2 c dried cherries

1/4 c chopped pistacchio

2 oz feta cheese

1 stem rosemary, roughly chopped

Tools needed:

Cutting board

Sharp knife

Small stockpot

Small fine mesh strainer

Measuring cup

Serving tray

Let’s make it:

Sherry vinegar reduction

Sherry vinegar reduction with rosemary stem and peppercorn medley.

Measure vinegar and place in stock pot along with peppercorns and rosemary stem. Over medium heat (5 on the dial) bring vinegar up to a boil with peppercorns and herb stem. Heat to a boil, reduce heat to low (2 on the dial) to keep a simmer going. Simmer for 20 minutes or until vinegar is reduced to 2 tbsp. Cool slightly and strain discarding the peppercorns and herb stem.

Cut stem tops off the figs. Cut figs in an x pattern from the top half way down on the fig. Carefully place 2 dried cherries, pinch feta and pistacchio inside the fig. Top with chopped rosemary and the vinegar reduction. Arrange on a platter and garnish with arugula and fresh berries.
