Easy Cauliflower Steak Recipe Made At Home
Cauliflower steak is a great option if your’e looking for a dinner that is light, healthy and with ton of flavor! Served over quinoa and paired with roasted mini sweet peppers is one way I found that taste great and is also healthy. I made a video recipe on Youtube, head on over there for this delicious recipe! Fresh ingredients, easy on the wallet and great for your health. This is literally the very first time making cauliflower steak for me, and I do have to say it is a great meal. I felt full, recharged and overall great after having this for dinner. It’s always exciting trying new food recipes for the first time. Sometimes, they don’t work out and have to be readjusted. For this cauliflower steak, I wouldn’t change a thing after the first go at making it.
Ingredients:
1 head cauliflower. Yields 3 steaks per head of cauliflower
2 c cooked quinoa (link has recipe)
1 stem fresh tarragon leaves, roughly chopped
12 roasted mini sweet peppers, juilienned. 4 peppers per cauliflower steak (link has recipe)
1/2 c vegetable stock
2 tbsp olive oil
1 tbsp kosher salt
2 tsp freshly cracked black pepper
For the marinade:
1 c olive oil
1/2 c white wine vinegar
1 tbsp dijon mustard
1 shallot, minced
3 cloves garlic, minced
1 tbsp kosher salt
2 tbsp olive oil
Tools needed:
Cutting board
Sharp knife
Mason jar
plastic bag
Saute pan
Stove top
Let’s make it:
Cut stem off cauliflower. Cut center section of cauliflower making it a 1 inch thick slice. You can get 3 steaks out of each head of cauliflower if done properly. I made “petite” steaks with the smaller florets. Make marinade and place cauliflower steaks plus marinade in a gallon zip lock bag. Let marinate overnight or minimum 6 hours turning over half way through the marinade time.
When you’re ready to cook, take cauliflower out of marinade letting some of the marinade drip off the cauliflower. Preheat your saute pan, add 2 tbsp oil. Carefully place cauliflower in pan, cover with a lid after about 1 minute of searing. Let it cook for the 1 minute without lid to get a good browning. The marinade will also cook and caramelize onto the cauliflower. DELICIOUS. Cook the first side for 3-4 minutes. Flip over and cook for another minute. Deglaze pan with vegetable stock. Cover pan with lid once again and cook for an additional 3-4 minutes until nice and tender.
Beautiful brown color on the first side, that’s all flavor right there. The marinade on the cauliflower gets nice and caramelized and adds extra goodness!
