Baked Chicken Thighs With Honey And Lime Glaze - Perfect For Meal Prep
Ingredients:
4-5 chicken thighs
1 c honey (I used my fermented habanero honey garlic) - recipe here
3 cloves garlic, rough chopped
2 limes zested and juiced
Pinch salt and pepper
1 tbsp oil
Seasoned salt (click here for my recipe)
Tools needed:
Cutting board
Sharp knife
Citrus zester
Large mixing bowl
Baking dish
Aluminum foil
How to make it:

Preheat oven to 425 f
Drizzle oil over the chicken thighs, season generously with seasoned salt. Place chicken into your baking dish, cover it with foil. Place in the oven and bake for 15-20 minutes. I like to check the temperature of the chicken when it the timer goes off at this point to get a good idea of how much longer the chicken needs to go once the glaze gets put on. Procedure follows.
While the chicken is baking, let’s make the glaze.
In a mixing bowl place the honey, lime zest and juice, chopped garlic and a pinch of salt/pepper. You can add additional spices if you like…paprika, chili powder, cayenne pepper etc.
Once the timer goes off for the chicken, remove chicken from the oven and coat the chicken with the glaze. Place the chicken back into the oven and bake for an additional 10-15 minutes or until the internal temperature reaches 165 f. Remove the chicken from the oven, coat once more with the glaze and let chicken rest for a few minutes.
Great served over some mashed potatoes and a side of asparagus or brussels sprouts.
